Avocado toast with Lime Salsa Gouda

Ingredients

  • 2 avocados
  • 30 ml (2 tbsp. tablespoons)  lime juice
  • Salt and ground pepper
  • 125 ml (1/2 cup) diced tomato
  • 60 ml (¼ cup) chopped red onion 
  • 120 g (4 oz) Monsieur Gustav Lime Salsa Gouda 
  • 125 ml (1/2 cup) chopped fresh cilantro and more to garnish
  • 15 ml (1 tablespoon) butter
  • 4 eggs 
  • 4 slices loaf bread 

Preparation

Step 1

In a bowl, mash the avocado with a fork.

Step 2

Add the lime juice and season to taste.

Step 3

Stir in the diced tomatoes, chopped onion, and cilantro.

Step 4

Grate the cheese using the fine side of the grater to get finely grated cheese.

Step 5

In a large skillet over medium heat, melt the butter and cook the eggs to your liking, either sunny-side up or flipped.

Step 6

Meanwhile, toast the slices of bread in the toaster.

Step 7

Spread the guacamole on the toast and add half of the cheese.

Step 8

Top with the eggs, the remaining cheese, and a bit of cilantro.
