Smashed Potatoes Topped with Swiss Cheese and Caramelized Onions

Ingredients

  • 6 medium-sized yellow-fleshed potatoes, washed
  • 15 ml (1 tbsp) butter
  • 1 onion, sliced
  • 10 ml (2 tsp) whole grain mustard
  • 15 ml (1 tbsp) maple syrup
  • 30 ml (2 tbsp) melted butter
  • Salt and pepper to taste
  • 1 pack (170 g) Monsieur Gustav Swiss cheese
  • 30 ml (2 tbsp) chopped fresh chives
  • Sour cream to taste

Preparation

Step 1

Using a fork, prick the potatoes and place them on a microwave-safe plate.

Step 2

Cook for 4 to 5 minutes, turn the potatoes, and cook for another 4 to 5 minutes or until the potatoes are tender. Cooking time may vary depending on the microwave's power.

Step 3

Meanwhile, in a skillet over medium heat, melt 15 ml (1 tbsp) of butter and the onion for 5 minutes or until colored. Set aside.

Step 4

Preheat the oven to 475°F (240°C). Place the rack at the top of the oven.

Step 5

Cover a baking sheet with parchment paper and place the potatoes on it.

Step 6

Smash the potatoes using a thick-bottomed glass or a rolling pin.

Step 7

In a bowl, combine the mustard, syrup and melted butter. Heat for a few seconds in the microwave if the mixture is thick or the butter hardens.

Step 8

Brush the potatoes with half of the melted butter mixture and season generously.

Step 9

Bake for 5 to 7 minutes or until the potatoes are golden. Turn the potatoes, brush with the remaining mixture, and season again. Continue baking for another 5 to 7 minutes.

Step 10

Top the potatoes with the onion and cheese. Return to the oven to melt the cheese.

Step 11

Serve with a sprinkle of fresh chives and a side of sour cream, if desired.
